Sausage and peppers with Tuscan spice

Ingredients

  • 1½ pounds Italian sausage links
  • 3 bell peppers, sliced
  • 1 large onion, sliced
  • 2 tablespoons olive oil
  • 2 teaspoons Paul’s Nickel Bag Tuscan Spice
  • 2 garlic cloves, sliced
  • ½ cup crushed tomatoes
  • Fresh basil
  • Crusty rolls or creamy polenta, for serving

Method

  1. Heat a large skillet over medium-high heat. Brown the sausages in one tablespoon olive oil, then transfer to a plate.
  2. Add the remaining oil, peppers and onion. Cook until softened and lightly charred.
  3. Stir in the garlic and Tuscan Spice. Add the tomatoes and return the sausages to the pan.
  4. Cover and simmer for 15 minutes, until the sausages are cooked through. Finish with basil and serve in rolls or over polenta.

Pour it with Barbera d’Asti DOCG.

Barbera’s bright acidity cuts through the sausage while its cherry fruit keeps pace with sweet peppers and tomato.
